Breakfast Egg Muffins

  • 6 egg whites
  • 3 eggs
  • ½ cup spinach
  • ¼ cup red pepper
  • ¼ cup ham
  • ¼ cup cheddar cheese


Whisk egg whites and eggs together in a large bowl. Add spinach, red pepper, ham, and cheese to the eggs, and stir. Divide the mixture evenly into 6 sprayed muffin tins. Cook in the oven for 15 minutes on 375 degrees.
