Hummus Veggie Wrap

If you stop to reflect about when you cave and scarf down a meal from the drive-thru window, what are the circumstances? Often times, it’s when we fail to plan ahead. Whether you’ve just got done cheering on your kids at their basketball game, putting in overtime at work to finish end of the year tasks, or enjoying conversation with your local church group, most of us find ourselves in the fast food line when we’re tired, hungry, and are ready to be home. Instead of spending your money on food that is going to block you from reaching your New Year’s Resolutions, make a Hummus Veggie Wrap when you get home instead.


  • 2 tsp. Coconut Oil
  • 1 cup mixed fresh vegetables (we like onions, broccoli, snap peas, and red peppers)
  • 2 Tbsp. Hummus
  • 1 spinach tortilla wrap (or substitute your favorite whole grain wrap)


Heat the coconut oil in a skillet on medium. When the coconut oil is heated, add the mixed vegetables. Cook until vegetables are thoroughly cooked – about 5 minutes. While vegetables are cooking, spread hummus onto tortilla wrap. Place cooked vegetables on the wrap and fold the wrap burrito style. Enjoy!
